Our Brioche French Toast Casserole is a deliciously easy breakfast or brunch casserole perfect for a cozy day at home. This French toast casserole is made with my favorite brioche bread loaf and custard mixed with lots of cinnamon and homemade brown sweetener for that extra flavor.

Overnight brioche French toast casserole is a breakfast casserole made in the evening and stored overnight in the fridge before baking the following morning.

The buttery brioche bread soaked in a custard mixture overnight gives you a rich and decadent flavor. The following day, you have to pop it in the oven and bake the French toast to perfection. The result is a perfectly golden, crispy top and a fluffy, buttery interior.

Customizing the Recipe

  • You can increase the amount of brown sugar used in the custard mixture for a sweeter baked french toast casserole.
  • If you like extra soggy bread, add a bit of whole milk or half and half in.
  • For a savory casserole, add some herbs and spices such as thyme or rosemary.
  • Some extra toppings can be added, such as chopped nuts, chocolate chips, cranberry powder or a drizzle of caramel sauce.
  • You can use different types of bread, such as challah, sourdough, or whole wheat bread.
  • Berries or fresh blueberries can be swapped with different fruits, for example, apples, peaches, or even bananas. They can also be added before baking.
  • This recipe is perfect for meal prepping. Simply slice it up and reheat it in the microwave or oven.

How to Make Brioche French Toast Casserole

FULL INSTRUCTIONS WITH STEPS FOR BRIOCHE FRENCH TOAST CASSEROLE RECIPE

First step: Prepare all Ingredients

Get all of your ingredients ready. If you are baking your loaf of brioche bread, it is best to use slices that are a few days old and not fresh.

The brown sweetener can be made home by mixing crystalized monk fruit with yacon syrup.

Preheat the oven to 390 Fahrenheit or 200 degrees Celsius if you bake the casserole straight.

Second step: Prepare Custard Mixture

Mix eggs, heavy cream, brown sweetener, cinnamon, and vanilla in a large mixing bowl or a jar. Whisk thoroughly and set aside.

Third step: Whisk

Whisk together the egg mixture fully and set aside.

Fourth step: Assemble

Cut your brioche into thick slices and each slice of brioche into squares. Place the cubed brioche into a baking dish and pour mixture over the bread.

Place cubed butter pieces and, optionally, a bit of brown sweetener and cinnamon on top of the casserole.

If you cook it straight, allow the casserole to rest for 10 minutes for the custard to soak into the french bread. Place into the preheated oven and bake this easy brioche french toast casserole for 30 to 40 minutes.

If you want to let it soak overnight to get more soggy bread pieces, cover the casserole and place it into the refrigerator. The following day, pull the casserole out of the fridge and bake it for a fresh, delicious breakfast or brunch.

Once ready to serve, you can top with fresh berries and powdered sugar sweetener together with maple syrup or honey.

  • Brioche – it is best to use stale brioche or challah bread.
  • Dairy-free – swap heavy cream with almond milk, coconut milk, or coconut cream. Butter can be exchanged for dairy-free butter.
  • Gluten-Free – Using the brioche in the recipe makes this dish entirely gluten-free. If you choose a store-bought option, ensure you get a gluten-free loaf or brioche.
  • Extra spices – You can add a pinch of nutmeg or dry ginger for additional flavors.

Additionally, you can reduce the amount of liquid used in the recipe, such as cutting back on the amount of milk or using a larger dish so that there is more area for the liquid to sit on.

Brioche French Toast Bake can be stored in an airtight container or wrapped in foil in the refrigerator for up to 5 days. To reheat, place a slice of the bake on a baking sheet and heat in a preheated 350°F oven until it is warm throughout.

Yes, you can. Just wrap the casserole tightly with plastic wrap and aluminum foil, and freeze for up to 3 months. When ready to eat, thaw overnight in the refrigerator and then bake as directed.

    I would say that this is such a comfort food! So good! I love how delicious the mixture turned out.I used a few days old bread to get the same outcome. Yum!
