  • Get ready all the ingredients for making chicken enchiladas. Prepare the cooked chicken by shredding it carefully by hand. Preheat your oven to 350°F (175°C).
  • Place at least 2 scoops of your enchilada sauce in the bottom part of the pan. Spread it all over until the sauce covers up the whole base.
  • Put a bit of shredded chicken in a corner of your tortilla. Add your shredded cheese and a good amount of sauce on top of the chicken. Roll them up and carefully place them into the baking dish making sure they will not open.
  • Pour the remaining enchilada sauce over the top of the assembled tortillas in the baking dish. Add the shredded white and cheddar cheese on top of the enchiladas and prepare to bake.
  • Bake the enchiladas in the preheated oven for about 20-25 minutes or until the enchiladas are heated through and the cheese is melted and bubbly. Once ready, serve with a lemon, sliced avocado or guacamole, and sour cream.
