Prepare all your ingredients first. Make sure to pick the best quality chocolate you can find. Both milk and dark chocolate are great. I am using dark chocolate for this recipe. If a dark chocolate bar is thick, it takes time to melt, so breaking it into small pieces for easy melting helps. You can use unsalted peanuts just like mine, but you can also explore and try roasted peanuts, salted peanuts, soaked almonds, or walnuts.
Add boiling water to your instant pot, switch to saute and add a glass bowl. Add your chocolate and coconut oil, and let them melt on low heat. Use a stick to stir until the chocolate is completely melted, combined with coconut oil and smooth. This is an easy trick that I always do when melting chocolate. Once the chocolate is melted and smooth, switch the heat off and set the melted chocolate aside at room temperature.
Transfer the peanuts to the bowl of the melted chocolate and stir them in using a spoon or a baking spatula. Mix them properly with the chocolate to coat each peanut evenly. Another way of coating them is to pour the mixture onto the peanuts and continue for another batch until all are evenly coated.
Prepare a baking sheet with parchment paper and transfer the chocolate peanuts to it. Use long tweezers to remove each peanut from the melted chocolate and layer, leaving space between them so they will not stick together. Chill in the refrigerator until the chocolate is completely set and hardened.
Once they look like this, they are suitable for eating and storage. Take them off the sheet individually and put them in a storage glass or container. Optionally, add a sprinkle of sea salt for an additional taste.
