  • Start by preparing all the ingredients. If you are using soaked almonds, make sure to dehydrate them completely before coating them with chocolate. Another option for the almonds is to roast them for an extra flavor.
  • In a heatproof glass bowl, place the chocolate together with the coconut oil over simmering water in the instant pot and melt. This method is like using a double boiler. You can also melt your chocolate in the microwave using a microwave-safe bowl.
  • Once the chocolate is melted, start placing the almonds into the mold and spread them evenly. Add the melted chocolate onto the almonds using a spoon filling every gap and space on the bar mold to make the perfect chocolate almond bar shape.
  • Using a rubber spatula, scrape the excess chocolate on the side and make sure the chocolate and almonds are formed evenly. After making sure they are even, tap the mold a few times for a better result when they harden. Optionally, you can sprinkle flaky sea salt for a salty contrast to the sweetness of the chocolate. Chill in the refrigerator until the chocolate covered almond bark is firm. It usually takes about 1-2 hours.

Notes

  • Baking sheet method - while I am using a chocolate bar mode for this almond bark, alternatively you can also form the almond bark on a toast baking mold or a sheet pan covered with parchment paper. Most people use this method for their chocolate nut barks.
  • Chopped or whole almonds - if you want your almond bark to be more crunchy, use whole almonds. But if you want even distribution throughout the chocolate, try chopped almonds.
  • Coconut oil - to enhance the texture of your chocolate, use coconut oil. If you do not have one, you can also use a simple vegan vegetable shortening.
