  • Prepare the almonds and all the other ingredients. For this recipe, you can either use soaked almonds, roasted, or raw almonds. If you are using a chocolate bar, chop it into small pieces so it will melt more easily. Optionally, you can use chocolate chips for easy melting.
  • Start melting your dark chocolate by preparing the instant pot. Place in a glass bowl and melt the chocolate in a medium heat on top of the boiling water.  Stir the chocolate with coconut oil while melting to combine them perfectly. Be patient as slow melting ensures a smooth and perfect chocolate texture.
  • Once the chocolate is set and completely melted, fold the almonds into the chocolate. Coat the almonds and make sure they are evenly coated in chocolate. You can stir the almonds with a stick or spoon to coat them perfectly.
  • Using a small sieve, get all the coated almonds from the bowl removing all the excess chocolate. Either way, you can get each almond using a long tweezer or thongs. On a baking sheet, place the chocolate coated almonds creating each space from the other to prevent sticking.
  • After making sure the almonds are covered in chocolate, the finishing touch is sprinkling a pinch of flaky sea salt over the homemade chocolate covered almonds. I suggest sprinkling the toppings you want before chilling them while the chocolate is still smooth. Let your dark chocolate sea salt almonds set and enjoy it later when they are ready.

Notes

  • Baking sheet - whenever I make chocolate-coated food, I always prepare a baking sheet or parchment paper to let them set. It is the best for preventing the food from sticking not just only in baking.
  • Medium heat for melting - use gentle heat when melting the dark chocolate and coconut oil to avoid scorching and making the chocolate bitter. Also, tempered chocolate is best for coating.
  • Roast almonds - most people like toasting the almonds before dipping them into chocolate, and you can try them too because they are good as I have tried them from the store-bought ones.
