  • Separate the peanuts and almonds, then chop the chocolate into small pieces for easy melting. If using soaked almonds, make sure they are fully dried before coating.
  • Simmer water in the Instant Pot and place a heat-safe glass bowl on top with the chocolate and coconut oil. Stir continuously until the chocolate melts into a smooth, silky consistency.
  • Add peanuts and almonds to the melted chocolate in separate bowls and toss until fully coated. Transfer each coated nut onto a parchment-lined baking sheet, spacing them apart so they don’t stick.
  • Spoon coated nuts into small clusters and place them on parchment paper. Mini cupcake liners work well for peanut clusters since they’re smaller and easier to shape.
  • Pour the chocolate-coated nuts into a chocolate bar mold or silicone loaf pan and top with extra melted chocolate if needed. Let the bark set fully before removing and serving.
