  • Get all of the ingredients together. Mozzarella should be in a block and shredded at home. Usually, shredded cheese contains some starches to separate the shreds, which are not gluten-free. At the same time, preheat your oven to 180 Celsius or 350 Fahrenheit.
  • Start by heating your shredded mozzarella in a pan or cast iron skillet. Using a spatula, mix the cheese and let it melt fully. Once you melt the cheese, lower the heat and add a dry ingredient, oat fiber. Gently whisk, add eggs and whisk again.
  • Keep mixing the dough until all is combined and you get a uniform mixture.
  • Place the dough onto the silicone sheet, and using your hands, work the dough by stretching and folding it for approximately 5 to 6 minutes.
  • Split the dough into eight pieces. Take each piece and use a rolling pin to roll the tortillas into a round shape. Using one of the bowls, press onto the rolled sheet and make a round shape to get the tortillas look. Place each tortilla one at a time onto a baking sheet and bake in the oven for eight to ten minutes.

Notes

  • Mozzarella - make sure you buy a block of mozzarella and shred it yourself to avoid additional starches in the store-bought pre-shredded cheese.
  • Tortilla press - is a great help if you have one.
  • Dough - if you feel that the dough has got harder to work with, heat it up gently in the microwave and use it again.
