  • Start by cutting the chicken breasts or thighs into bite-sized pieces. It ensures that they cook evenly and soak up all the delicious flavors of the stir-fry sauce. You can use any part of chicken, like boneless skinless chicken thighs or even drumsticks, which is my favorite part. 
  • In your trusty cast iron pan, heat a bit of oil. Add onion and garlic and let it caramelize. Add the chicken pieces and let it sizzle until it's cooked through and beautifully browned. This is where the magic begins.
  • Add broth, soy sauce, and a pinch of xanthan gum once your cooked chicken is done halfway. Stir well, ensuring xanthan gum is distributed evenly to thicken the sauce.
  • Add the vegetables once the sauce has thickened, and cook for 3-4 minutes.

Notes

  • To add more flavor and keep it extra healthy, I recommend using low sodium chicken broth and teriyaki sauce to make teriyaki chicken.
  • You can also opt for rice noodles or zucchini noodles for a low-carb chicken stir fry.
  • Feel free to switch up the veggies based on what you have in your fridge – this recipe is flexible.
  • Play and experiment with flavors by adding a bit of crushed red pepper flakes or a few drops of rice vinegar.
  • Beef - instead of chicken, you can use beef in this recipe for a perfect beef stir fry. Just remember to cook beef much longer.
