No sugar apricot preserves are a simple way to capture pure fruit flavor without relying on added sweeteners or boxed pectin. This recipe uses ripe apricots to create a naturally thick, spreadable preserve that works for breakfast, baking, or gifting.
Wash, pit, and halve the apricots, then set them aside with the lemon juice, cinnamon, water, and optional xanthan gum.
Combine everything except xanthan gum in a pot, bring to a boil, then simmer for about 20 minutes until the apricots break down and thicken, mashing larger pieces as needed.
Stir in xanthan gum if using and cook briefly until the jam reaches your desired consistency, then let it sit before storing or serving.

Notes
Lemon: When the jam is almost cooked, add one more spoon of lemon juice to prevent it from turning brown.
Apricot chunks: Either leave the chunks or smash them with a hand smasher, but do NOT blend them thoroughly with a hand blender because we are making preserves and not jam.
Test - Place a small amount on a chilled plate to check if your preserves are ready. If it wrinkles when pushed with your finger, it's ready.
