Pick fresh garlic bulbs from the market or your harvest. Any type will do as long as it has the natural garlicky flavor. Choose those with crispy outer skin, or smell the garlic to check the freshness. Peel the garlic, clean the cloves with water, and let them dry before dehydrating.
Slice the garlic into thin and small slices. Pat dry the slices with a paper towel to remove any excess moisture. Prepare the dehydrator by attaching plastic insert silicone to the trays and spraying them with olive oil to prevent garlic from sticking. Assemble the garlic slices into the trays and dry them up until they're ready, which may take 7 to 8 hours, depending on the thinness of your garlic slices.
Place the dehydrated garlic in the blender of your choice. I used a magic bullet, but you can also use a food processor or mortar and pestle for grinding. Pulse the blender in short bursts until you achieve a fine consistency, and the granulated garlic is coarsely ground. This might take a few rounds, so be patient.
Pause and check the texture. Give it another round of pulsing until you reach your desired minced size.

Granule size - adjust the pulsing time in your blender to control the size of the granules. Longer bursts will give you a finer, more like cornmeal consistency, while shorter pulses may produce a coarser texture.
