Ingredients

  • 1 Tablespoon Butter
  • ½ Cup Sweet Onion chopped
  • 2 Pounds Yellow Squash about 5 medium, sliced into ⅓-inch pieces
  • 10.5 Ounce Cream of Mushroom Soup
  • 4 Ounce Cream Cheese softened
  • 1 Egg
  • 8 Ounce Sharp Cheddar shredded, divided
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper cracked
  • 25 Pieces Crackers crushed
  • 4 Tablespoons Butter melted

Instructions

  • Preheat the oven to 375°Fahrenheit (190°Celsius), grease a casserole dish, and prep the onion, cheese, and crushed crackers.
  • Slice the yellow squash into thick rounds and place them in a large bowl so they’re ready to mix.
  • Sauté the onion in butter until soft and golden, then stir in the cream cheese until smooth and creamy.
  • Combine the squash with the onion mixture, cream of mushroom soup, egg, half the cheese, salt, and pepper until evenly coated.
  • Mix crushed crackers with melted butter and the remaining cheese to create a crumbly topping.
  • Transfer the squash mixture to the dish, add the topping, and bake for 20–25 minutes until golden and bubbly, then serve warm.

Notes

  • Use a Mix of Cheeses: Combining sharp cheddar cheese with a milder cheese gives the dish a richer flavor. A little grated parmesan on top also adds a nice golden crust.
  • Add a Crispy Topping: Crushed ritz crackers or breadcrumbs mixed with melted butter create a crunchy layer that balances the creamy filling. Don’t skip buttery crackers, it makes the casserole extra special.
  • Make Ahead Friendly: You can prep the casserole a few hours in advance and keep it in the fridge until baking time. This is perfect if you’re hosting or want less stress at dinnertime.
