Making Creamy Mushroom Soup

It has been a while since I made my last soup recipe for my best clean-eating blog. This time, I made one that is creamy and rich, all at the same time. Of course, you can not compare it to our clear vegetable soup because each is unique.

Making this soup is super easy, using ingredients already in your kitchen pantry. It is definitely better than the canned soup you can find outside.

Types Of Mushrooms To Use

By making this soup recipe, you have some choices regarding what mushrooms to use. If you try a canned cream of mushroom soup, you will notice that they usually use button mushrooms.

If you plan on making a homemade mushroom soup, you can use different varieties. You can use:

  • Cremini – it is often called baby portobello mushrooms. Still, cremini has a deeper, earthier flavor than button mushrooms, and they are slightly firmer in texture and add richness to soups.
  • Portobello – these are meaty mushrooms that have a strong flavor and a chewy texture. They are great for the best umami flavor.
  • Shiitake – if you have yet to try these, they have a smoky and savory flavor. They have a meaty texture and are often used in Asian-inspired dishes, which is why they are perfect for any recipe, especially this one.
  • Oyster mushrooms – oyster mushrooms have a slightly sweet flavor and a velvety texture well-suited for condensed soup like this recipe.

How To Make Gluten Free Cream Of Mushroom Soup Recipe

Let’s start making this gluten-free creamy mushroom soup with the following steps. Make sure to check the recipe card for the exact measurements of the ingredients used.

  • Cooking Pot: A sturdy, medium-sized cooking pot will be needed to cook this mushroom soup. 
  • Bowls: To prepare your ingredients before cooking.

Ingredients:

  • Onions: White onions for sautéing for their flavor and aroma.
  • Butter: Butter is excellent for sautéing onions or mushrooms in any recipe instead of oil.
  • Broth: You will need a flavorful broth as a base for soup. It could be chicken broth or any vegetable and meat broth.
  • Mushrooms: Mushrooms are the crutial ingredient for this recipe.
  • Heavy Cream: This will add extra creaminess. You can also choose dairy free heavy cream like coconut milk or almond milk.
  • Salt and Pepper: These two common spices are necessary to season the soup to taste savory and with a little spicy kick.
  • Xanthan Gum (optional): This ingredient is a thickening agent commonly used in gluten-free cooking and baking. It will help to thicken the mushroom soup and provide a smooth and creamy texture.

FULL INSTRUCTIONS WITH STEPS FOR THIS GLUTEN-FREE MUSHROOM SOUP

First Step: Prepare The Ingredients

Start preparing by chopping your onions and mushrooms. Cut your onions into small pieces, just enough for sautéing, and chop the mushrooms into small but not-so-thin pieces.

Second Step: Butter, Onions, and Mushrooms

After preparing the onions and mushrooms, start cooking by heating the butter and adding the chopped onions. Cook the onions until golden brown, and then add the sliced mushrooms.

Third Step: Add Broth and Cream

Saute the mushrooms with the onions, and then add the broth. Let the mushrooms cook in the broth, and add the heavy cream.

Season with salt and pepper and cook for 10 minutes.

Fourth Step: Xanthan Gum

If the soup’s sauce is not thick enough, add Xanthan gum and mix. Remember that xanthan gum will thicken the soup even further after cooking.

TRICKS AND TIPS FOR MAKING THE BEST MUSHROOM SOUP:

  • Choose mushrooms – you can use a variety of mushrooms for the best flavor. While button mushrooms are common, adding other types of mushrooms can enhance the taste and texture of the soup.
  • Clean mushrooms properly – as we all know, mushrooms are like sponges and can absorb water quickly, affecting their texture when cooked. Instead of rinsing them under water, gently wipe them with a damp paper towel to remove any dirt or debris.
  • Vegan option – change broth for vegetable stock, butter for olive oil and heavy cream with coconut cream.
  • Control the flavor – you can control the flavor of your recipe for gluten-free mushroom soup by adding some umami spices like mushroom powder or garlic powder.
  • Thickening agent – if you do not have xanthan gum available, you can use any homemade cream or gluten-free flour to help thicken the consistency of the soup.

What I like about this recipe is that you can pair almost anything with it. You can dip your homemade bread, sprinkle with extra garlic powder and onion flakes, or even add some riced cauliflower. Adding it into casseroles like green bean or Tater Tot Casserole is another excellent idea.

Since this soup is always perfect with toppings on it, you can use herbs like parsley or chives. Some additional toppings could be dried mushrooms, granulated garlic, or just the simple dehydrated garlic flakes on top for the best flavor.

How Do I Store Mushroom Cream Soup?

When I make soup recipes with leftovers, I usually let them cool completely and put them in an airtight container to put in the fridge for a few days. Just ensure they are covered with a tight lid so they won’t create an odor. Three to four days in the fridge will be fine.

Can I Freeze Soups?

Yes, you can freeze soups if you want to store them longer. Place the soup in a resealable and freezer-safe bag and freeze. When ready to use, thaw it by transferring the frozen soup to a pot and reheating it.
