Gluten Free Trifle with Pumpkin

This gluten free pumpkin trifle layers a pumpkin spice sponge with cinnamon-sweetened whipped cream in individual glasses. Almond flour and psyllium husk powder give the sponge enough structure to hold its layers neatly after chilling.

Equipment

Ingredients

For the Sponge Cake:

  • 5 Large Egg Yolks
  • 5 Egg Whites at room temperature
  • ¼ teaspoon Cream of Tartar
  • ½ Cup Almond Flour fine
  • ¼ Cup Sweetener powdered
  • ¼ Cup Pure Pumpkin Paste
  • 1 Tablespoon Psyllium Husk powder
  • ½ teaspoon Pumpkin Spice Blend
  • 2 Tablespoons Water 30ml

For the Whipped Cream Topping:

  • ¾ Cup Heavy Whipping Cream 180ml cold
  • 2 Tablespoons Sweetener powdered

To Finish:

  • 1 teaspoon Ground Cinnamon

Instructions

  • Preheat the oven to 350°Fahrenheit (180°Celsius), line the tray, whip the egg whites, and beat the yolks with sweetener.
  • Mix the pumpkin, spices, psyllium, almond flour, and water into the yolks, fold in the whites, and bake for 15 minutes.
  • Flip and cool the sponge, then whip the heavy cream with sweetener until thick.
  • Layer the sponge, whipped cream, and cinnamon in glasses, then refrigerate for 30 minutes.

Notes

  • Pumpkin Spice Note: To mix your own blend at home, stir together 4 tablespoons cinnamon, 1 tablespoon ginger powder, 1 tablespoon cardamom powder, 2 teaspoons ground cloves, 2 teaspoons nutmeg, and 1 tablespoon allspice. This recipe uses just ½ teaspoon, so store the rest in a small airtight jar for future use.
  • The sponge needs to cool completely before you cut it into shapes for the glasses. A warm sponge tears rather than cutting cleanly, and the whipped cream melts on contact with a warm base rather than staying thick and stable through the full chill time.
  • The size of the glasses determines the number of portions and the look of the layers inside each one. Smaller glasses with more repeated layers look more impressive from the outside, larger glasses give deeper scoops of each component, and either approach works with the same quantities.
