Ingredients

  • 1 Cup Porcini Penny Bun
  • 1 Cup Shiitake Mushrooms
  • 1 Cup Champignons

Instructions

  • Prepare all types of fresh mushrooms you would like to dry. Pick the ones that are not damaged. Also, pick mostly porcini as they give us the most flavor.
  • Using a kitchen towel, gently clean each mushroom. If there are any impurities, cut them out. Slice your mushrooms into approximately half a millimeter or 1/4 of an inch thick and single layer one by one onto the dehydrating trays. Place all trays on top of each other, close the lid and dehydrate for 6 to 7 hours.
  • Once all the mushrooms are dried, let them cool and ensure they are fully dry. Place whole dried porcinis and other dried mushrooms into your magic bullet of the coffee grinder and pulse a few times until they turn into a fine powder.

Notes

  • Cleaning - Try to clean your mushrooms without using water. It helps in freshness as well as drying.
  • Type of mushrooms - try to use as many porcini mushrooms as possible for their excellent flavor
  • Grinding - if possible, grind dried mushroom pieces just before you need to use them. The flavor of freshly powdered mushrooms is extra flavorful. And you would not be left with too much mushroom powder.
  • Porcini - as porcinis are the strongest in mushroom flavor, you can make our recipe using only one type and separately powdered porcini mushrooms. Those can then be added whenever needed.
  • Opening - Wait to open the powder right after you grind your mushrooms. Let the powder to settle for a few minutes. Otherwise, the powder makes a big mess from the dust that it contains.
