STEP-BY-STEP INSTRUCTIONS TO MAKE MUSHROOM SEASONING
First Step: Ingredients Needed
Prepare all types of fresh mushrooms you would like to dry. Pick the ones that are not damaged. Also, pick mostly porcini as they give us the most flavor. Apart from shiitake and porcini mushrooms, I added button mushrooms.
Second Step: Dehydrate
Using a kitchen towel, gently clean each mushroom. If there are any impurities, cut them out.
Slice your mushrooms into approximately half a millimeter or 1/4 of an inch thick and single layer one by one onto the dehydrating trays.
Place all trays on top of each other, close the lid and dehydrate for 6 to 7 hours.
Make sure you swap the trays from time to time for uniform drying.
Third Step: Powder It
Once all the mushrooms are dried, let them cool and ensure they are fully dry. When you break a piece, it should snap with a crunch. That is the sign the slices are thoroughly dried.
Place whole dried porcinis and other dried mushrooms into your magic bullet of the coffee grinder and pulse a few times until they turn into a fine powder.
You can use a food processor or blender for powdering if you have a larger amount.
Let the powder settle for a few minutes, and only then open the lid. Fill up your jars and store them.
TIPS AND TRICKS:
- Cleaning – Try to clean your mushrooms without using water. It helps in freshness as well as drying.
- Type of mushrooms – try to use as many porcini mushrooms as possible for their excellent flavor
- Grinding – if possible, grind dried mushroom pieces just before you need to use them. The flavor of freshly powdered mushrooms is extra flavorful. And you would not be left with too much mushroom powder.
- Porcini – as porcinis are the strongest in mushroom flavor, you can make our recipe using only one type and separately powdered porcini mushrooms. Those can then be added whenever needed.
- Opening – Wait to open the powder right after you grind your mushrooms. Let the powder to settle for a few minutes. Otherwise, the powder makes a big mess from the dust that it contains.

Making homemade mushroom salt is an easy and delicious way to add flavor to use every day for your favorite dishes. First, you will need to gather some dried mushrooms. You can buy dried mushrooms at most local grocery stores, health food stores, or make your own.
Combine the mushroom powder with a good quality sea salt in a bowl, stirring until evenly mixed. You must know how much powder you use compared to the salt ratio. For a stronger flavor of mushrooms, I always go for at least 3/4 of the mushrooms compared to salt.
This flavorful seasoning can enhance any savory dish, from soups and stews to pasta and roasted vegetables. Use the powder salt on almonst any dish you desire. Store the mushroom salt in an airtight container for up to six months.
If you use other types of dried mushrooms, dry herbs such as dried thyme, dry red pepper, garlic, onion, etc., you can try making your own mushroom seasoning or umami-packed seasoning salt for everything.
How To Make Magic Mushroom Powder?
Using the same steps, just replacing ordinary mushrooms with magic mushrooms will give you the perfect powder you are looking for.
How To Dehydrate Mushrooms in The Oven?
Dehydrating mushrooms in the oven is a great way to preserve them for future use if you do not own a dehydrator.
Begin by preheating the oven to the lowest setting, usually around 140-170 degrees Fahrenheit. Then, lightly rinse and dry the mushrooms before cutting them into thin slices. Place the pieces on a parchment paper-lined baking sheet and bake for around 3-5 hours until they are completely dry.
Be sure to stir or flip the slices every hour or so to ensure even dehydration. Once done, remove from oven and allow to cool before storing in an airtight container in a cool and dry place for up to six months.
Using oven, you can also dry orange skin and later on blend it into a smooth orange peel powder, great as addition to your stews or chicken dishes or sprinkle over desserts for that additional color feature.
