Gluten Free Sponge Cake

This gluten free sponge cake bakes light and airy with a golden top, a tender crumb, and a clean vanilla flavor that works equally well plain from the pan or as the base of a layered cake. No potato starch, no other blends, and no gum thickeners anywhere in the recipe.

I made this during my afternoon tea time when I wanted something that felt like a proper bake without any of the complexity that most gluten-free sponge cake recipes require. It came out of the oven golden, fully set, and far lighter than I expected from an almond flour batter. It has been my go-to sponge cake base ever since.

Almond Flour Gives a Better Crumb Than Any Gluten Free Blend

This gluten-free vanilla cake uses finely ground almond flour rather than a regular flour blend, potato starch, or any mixed bag of starches, resulting in a naturally moist, tender crumb that does not turn gummy or dry after it cools completely. The almond flour works with the whipped egg whites to give the cake its lift and structure without anything artificial holding it together. A Cake That Works Two Ways

This vanilla cake works beautifully served plain with a dusting of powdered sweetener and a handful of fresh strawberries or berries on the side, and it works just as well as the base of a layered cake filled with whipped cream and fresh fruit. The clean flavor of the almond flour and vanilla extract lets the toppings take center stage without competing. For the topping, you can make my no-sugar-added apricot Preserves or have my lavender mocktail with and homemade hot chocolate mix.

How To Make Gluten Free Sponge Cake

A 9-inch springform pan, two mixing bowls, and a hand mixer are all it takes to put together a light and airy gluten-free sponge cake that bakes golden and slices cleanly in under 40 minutes.

Kitchen Gadgets:

  • Oven: Bakes the sponge cake until golden on top and fully set throughout.
  • 9 Inch Springform Pan: A cake pan that holds the batter and releases the finished cake cleanly without damaging the crumb.
  • Parchment Paper: Line both the base and sides of the springform pan so the sponge cake comes out in one clean piece.
  • Mixing Bowl: For beating the egg whites and for the egg yolk batter.
  • Hand Mixer or Electric Mixer: Whisk the egg whites to medium peaks, then whisk the egg yolks with the sweetener until light in color and creamy in texture.
  • Spatula: Folds the whipped egg whites into the almond flour batter gradually, using slow, wide strokes to preserve as much volume as possible.

  • Egg Whites: Beaten with cream of tartar until medium peaks form, giving the cake its light, airy structure and lift without any flour-based leavening.
  • Cream of Tartar: Added to the egg whites before beating to stabilize them so they hold their volume when folded into the batter.
  • Egg Yolks: Beaten with the sweetener until light in color and creamy in texture, building the rich, tender base of the batter.
  • Sweetener: Beat into the egg yolks until the mixture is pale and creamy, to sweeten the cake evenly throughout.
  • Pure Vanilla Essence: Stirred into the egg yolk mixture to give the sponge cake a clean, warm vanilla flavor throughout.
  • Almond Flour: Added to the egg yolk batter and stirred until a thick batter forms, ready to be lightened with the whipped egg whites.

FULL INSTRUCTIONS WITH STEPS FOR BAKING THIS GLUTEN-FREE SPONGE CAKE RECIPE

First Step: Lay Out Your Ingredients

Preheat the oven to 350°Fahrenheit (180°Celsius) and line the base and sides of the 9-inch springform pan with parchment paper before anything else. Separate the eggs into two clean bowls and have the sweetener, vanilla essence, almond flour, and cream of tartar measured and within reach before you start. Having everything prepped and the pan ready means the batter goes straight in, without delay, once it is mixed.

Second Step: Beat the Egg Whites and Make the Batter

Add the egg whites and cream of tartar to a mixing bowl and beat until medium peaks form, the mixture should be fluffy and stable while still smooth and glossy. In a separate bowl, beat the egg yolks together with the sweetener for 2 to 3 minutes until light in color and creamy in texture, then mix in the vanilla essence. Add the almond flour and stir until a thick batter forms.

Third Step: Fold and Bake

Mix a small spoonful of the whipped egg whites into the thick batter first to loosen it, then gently fold in the rest gradually using a spatula with slow, wide strokes from the bottom of the bowl upward. Pour the mixture into the prepared pan, level the top, and tap the pan gently on the counter to release any larger air bubbles. Bake for 35 minutes until the sponge cake is golden on top and fully set throughout.

Fourth Step: Cool and Serve

Leave the cake to cool completely in the pan before releasing the springform clasp and removing it. Cooling completely before removing is essential as the delicate almond flour crumb needs time to firm up and will tear if handled while still warm. Serve plain, dusted with powdered sweetener, or use it as a base for a layered cake with whipped cream and fresh berries.

Zuzana’s Kitchen Notes:

I also tested opening the oven door at the 20-minute mark to check progress, and the temperature drop caused a visible sinking in the center that did not recover before the cake finished baking. Keeping the oven closed for the full 35 minutes and checking only at the end is what gives you a fully risen, evenly golden sponge cake every time. For another bake that gives the same oven discipline and patience while cooling, my brioche French toast casserole is worth trying for the next morning when you want something new from the oven with minimal hands-on effort.

Can I Freeze GF Sponge Cake?

Yes. Wrap the cooled cake tightly in plastic wrap and freeze for up to one month. Thaw overnight at room temperature before serving. Freeze the plain sponge cake only, and add any toppings or whipped cream fresh after thawing for the best result.
