 A bundt cake is a cake made using a special pan called a bundt pan. The shape of the pan is round, with fluted sides and a hole in the middle.

What Gluten Free Flour Blend Is Used In This Cake?

As my favorite gluten free flour has been for years almond flour, that is what I have used in this recipe.

It has a very light flavor and does not overpower other ingredients. You only need half a measuring cup for the whole recipe to get that perfect light and fluffy texture.

I did not need to use gluten free flour blend, as almond flour offers you all you need. 

The King Arthur brand is excellent if you are not making your almond flour at home. 

How Many Calories Are in a Gluten-Free Bundt Cake?

The calories of our easy gluten free cake are the best a cake can offer. A piece with your morning coffee contains only 14 grams of calories and 1 gram of carbs.

If you want to make a gluten-free and dairy-free cake, you have come to the right place. Our bundt cake is both. 

How To Make Best Gluten-Free Cake

Here is the complete instruction with images and steps to baking it the most straightforward way, even if you are not a baker.

A great suggestion is to make your own almond flour from soaked and activated almonds for even greater taste and flavor.

The exact measurements are in the recipe card. I have also included a video in case you prefer visual instructions.

  • Kitchen machine or Stand mixer

Ingredients:

  • Eggs
  • Sweetener
  • Almond flour
  • Baking powder
  • Cocoa

FULL INSTRUCTIONS WITH STEPS FOR GLUTEN-FREE BUNDT CAKE RECIPE

First Step: Prepare all ingredients

Prepare your ingredients. Cocoa powder is optional. Depending if you want to add the marble effect to your cake or not. 

Eggs should be at room temperature for the best whip.

The sweetener I have used is from natural monk fruit.

At the same time, preheat your oven to 340 Fahrenheit or 170 Celsius.

Second Step: Egg whites and batter

Whip up your egg whites in a large mixing bowl using a kitchen machine. Set aside for later.

Mix egg yolk with sweetener in the second mixing bowl until smooth and light yellow. Combine the dry ingredients and slowly add to the mixture while your cake batter is set to mix on low speed.

Third Step: Combine and pour

Once your batter is appropriately combined, switch your kitchen machine off and manually add egg whites. Using a silicone spatula, gently fold all of the egg whites in. This process will give your bundt cake a beautiful, fluffy, light texture. 

Pour batter into the prepared bundt pan and leave about 1/4 of the batter out if you plan to make a marble effect.

Fourth Step: Chocolate marble – optional

Into the rest of the batter, add cocoa powder and mix thoroughly. 

Pour on top of your batter into the middle. 

Using the back of the spatula, a toothpick inserted, or a wooden stick, gently incorporate the cocoa mixture to form a lovely marble effect.

Place into the preheated oven and bake the cake for 45 minutes. 

Once the cake is done, remove the cake from the oven, and place the cake onto a cooling rack.

After about half an hour, invert the cake and gently remove the pan by slowly releasing the sides of the cake first, followed by the middle of the cake. The cake should come out easy, and the center comes out clean.

Place back onto the cooling rack and let the cake cool fully.

TRICKS AND TIPS:

  • Cocoa powder – is optional and does not have to be added.
  • Eggs – need to be a t a room temperature to get the best fluffiness and texture.
  • Addition – half a cup of dehydrated cranberries added into the mixture before baking is great tip.

What To Serve With Bundt Cake?

As already mentioned, this cake is perfect for breakfast or early morning with your cup of coffee, warm cup of tea or orange juice for cold days. It is excellent for a brunch gathering or when unexpected guests arrive. 

As it is very versatile, you can treat it as a layer cake, add more toppings and fruits into the middle, and have it even as a birthday wonder. The hollow center comes as a great space for various fillings. 

As toppings, I would suggest decorating the top of the cake with lemon curd, frost the cake with your favorite icing, gluten-free chocolate shreds, chocolate glaze or melted chocolate, mini chocolate chips, or even white chocolate. If kids are around the house, those colorful gluten free sprinkles will make their day.

Do I have To Grease a Bundt Cake Pan to Prevent Sticking?

When I started baking with almond flour, I had a real issue with everything sticking into the pan. I used oil spray and greased it as much as possible. The cakes were always sticking to the pan. 

Until a friend of mine suggested using silicone pans for gluten-free baking. I have since then purchased every shape possible in silicone, which always works. No need to grease anything. The cake comes out clean every single time. 

Can I Make This Cake Without a Bundt Pan?

You sure can pick whatever pan you have at home. It might not look like a bundt cake anymore, but trust me. The taste and flavor are so delicious that nobody cares what shape the cake is. 

Can I Make Gluten-Free Vanilla Bundt Cake From This?

It is super easy to transform this into a light vanilla cake. All you need to do is exchange cocoa with vanilla extract. Of course, not at the same amount, but if you do not like the marble texture and prefer more vanilla flavor, a tablespoon of vanilla extract or a teaspoon of pure vanilla will give you exactly that.

Can I Make This Cake Ahead of Time?

Yes, you can make this cake a day or two in advance. 

How To Store This Best Gluten Free Cake?

Allow it to cool completely before wrapping it in plastic wrap and storing it on the countertop.

Another option is to wrap the cooled cake in aluminum foil and place it in an airtight container or freezer bag in the refrigerator.

It is essential to make sure that whatever container you use is completely sealed, so your cake stays moist and does not become stale or dry out quickly. 

Can I Freeze This Gluten Free Bundt Cake?

Yes, you can freeze a gluten free bundt cake. It is best to wrap the separate cake slices tightly in plastic or aluminum foil and place them in an airtight container.
Then, you can store the cake in the freezer for up to 3 months. 
When ready to enjoy the cake, thaw it overnight on the counter or in the refrigerator. 
You can also warm up slices of frozen bundt cake in the oven or microwave before serving.

  • 1/4 Cup 4 Tablespoons - 60 gram Sugar Substitute
  • 1/2 Cup 7 Tablespoons - 60 grams Almond Flour
  • 2 teaspoons - 8 grams Baking Powder - optional
  • 2 Tablespoons - 15 grams Cocoa
