These oven roasted carrots are one of the most reliable side dish recipes in my kitchen. Baby carrots tossed in a honey glaze with olive oil, butter, and garlic powder, then roasted until the edges brown and the carrots’ natural sweetness turns into something genuinely good. A simple roasted carrots recipe that works alongside almost any main dish on any weeknight.

My mom dropped off a five-pound bag of carrots from her garden one afternoon with no warning. I roasted the first batch plain, and they were fine. For the second batch, I made a glaze from whatever was on the counter. The honey and butter together achieved perfect caramelization at the edges during roasting, making the plain version feel like a missed opportunity. I have not made them any other way since.

Baby Carrots Roast Better Than Whole Carrots

Baby carrots are uniform in size, so they roast at the same rate, with no pieces finishing early or remaining firm in the center. Whole carrots cut into pieces work too, but the cut edges dry out faster than the rounded sides, which creates uneven caramelization across the batch. First Step: Preheat and Get Everything Ready

Preheat the oven to 400°Fahrenheit (200°Celsius) and line a large baking sheet with parchment paper. Wash the baby carrots and pat them completely dry with paper towels before anything else. Set out the honey, olive oil, butter, salt, and garlic powder so the glaze is ready to whisk the moment the oven reaches temperature.

Second Step: Make the Glaze and Toss the Carrots

Whisk the honey, olive oil, melted butter, salt, and garlic powder together in a bowl until fully combined and smooth. Place the dried baby carrots into a large mixing bowl, pour the glaze over the top, and toss the carrots thoroughly until every piece is coated on all sides. Third Step: Spread and Roast

Transfer the glazed carrots onto the prepared baking sheet and spread them out in a single layer with space between each one. Place on the middle rack and roast for 30 to 40 minutes, turning once at the halfway mark so both sides get even contact with the heat and develop golden edges all the way around.

Fourth Step: Finish and Serve

Remove from the oven when the carrots are tender when pierced with a fork and the edges have turned golden brown with visible caramelization from the glaze. Scatter fresh parsley and a grind of black pepper over the top if using. Serve warm straight from the pan.

Zuzana’s Kitchen Notes:

The turning step at the halfway mark is easy to skip and worth doing every time. I tested a batch where I left the carrots untouched for the full 40 minutes, and the underside sitting against the parchment turned much deeper in color while the top stayed pale. Turning them once at 20 minutes gave even caramelization on both sides without any burned patches underneath. For another oven-roasted vegetable side dish, my cheesy baked broccoli is a good companion recipe worth making at the same time.

  • Whole carrots cut into similar-sized pieces work in place of baby carrots. Cut them on the diagonal into roughly equal lengths so they roast at the same rate across the pan.
  • Add a pinch of fresh thyme or a sprig of rosemary on the baking sheet before roasting for a savory herbal note that works well against the sweetness of the honey glaze.
  • A drizzle of extra honey straight out of the oven, while the carrots are still hot, intensifies the glaze and adds a glossy finish to the surface before serving.

Freezing is not recommended for roasted carrots with a honey glaze. The glaze becomes watery as the carrots thaw, and the texture turns soft rather than keeping any of the roasted edge. Make this recipe fresh each time for the best result. The prep is quick enough that it does not justify the loss of quality from freezing.
