Ingredients

Cranberry Layer

  • 1½ Cups Cranberries fresh or frozen
  • 2 Tablespoons Lemon Juice
  • 1½ Cups Water 360 ml
  • ½ teaspoon Stevia Powder
  • ½ teaspoon Xanthan Gum

Pound Cake Batter

  • ½ Cup Unsalted Butter softened
  • 1 Cup Sweetener
  • ½ teaspoon Stevia Powder
  • 6 Ounces Cream Cheese about ¾ of a standard block, softened
  • 1 Tablespoon Zest of 1 Lemon
  • 3 Tablespoons Lemon Juice
  • 5 Large Eggs
  • 2½ Cups Almond Flour
  • 1½ teaspoons Baking Powder

Instructions

  • Preheat the oven to 350°Fahrenheit (180°Celsius), line two loaf pans, and prepare the ingredients.
  • Cook the cranberries, lemon juice, water, and stevia until thick, then stir in xanthan gum and cool slightly.
  • Beat the butter, sweetener, stevia, and cream cheese until smooth and fluffy.
  • Mix in the lemon, eggs, almond flour, and baking powder until combined.
  • Layer the cranberry mixture and batter in the pans, bake for about 1 hour, then cool completely.

Notes

  • Make sure all ingredients are at room temperature before mixing. This helps the batter blend smoothly and gives the bread an even texture.
  • Do not overmix once the dry ingredients meet the wet ingredients. Gentle mixing keeps the bread soft instead of dense or tough.
  • If using frozen cranberries, thaw and pat them dry first. Too much moisture can affect how the bread bakes in the center.
  • Test doneness by inserting a toothpick into the center of the loaf. It should come out mostly clean with a few moist crumbs, not wet batter.
