Gluten Free Trifle with Pumpkin

This post may contain affiliate links. Read my disclosure policy.

This gluten free trifle layers a pumpkin spice sponge with cinnamon-sweetened whipped cream in individual glasses for a dessert that looks like real effort and comes together in under an hour. The sponge gets its structure from almond flour and psyllium husk powder, with no wheat and holds its layers cleanly through a 30-minute chill.

I started making trifles in individual glasses after realizing that a dessert with visible layers looks impressive in a way a slice of cake never quite manages. Every time I pull these out of the fridge, they look like I spent the afternoon in the kitchen, which is exactly the result I always want.

30-Minute Chill

The chill time turns a stack of separate components in a glass into a cohesive dessert: the cinnamon softens into the cream, the layers settle together, and the sponge absorbs just enough moisture from the whipped cream to feel like it belongs in the same glass. Strawberry and vanilla ice cream make a natural pair to serve alongside each glass once the trifle comes out of the fridge; the dark chocolate almond bark adds a chocolate element you can break into pieces and set beside each portion.

Egg White Folding Technique

The whipped egg whites provide the only lift in this gluten-free sponge, and whether they reach medium-stiff peaks determines whether the final cake is light and layerable or dense and flat. Adding roughly a quarter of the whites to the thick almond flour batter first and beating it through loosens the base before you add the remaining whites, making the gentle folding much more manageable without deflating the foam you spent time building.

How To Make Gluten Free Trifle Recipe

This gluten-free trifle recipe uses a pumpkin sponge baked flat on a lined tray, cut into shapes, and layered with cinnamon-sweetened whipped cream in glasses.

Kitchen Gadgets:

  • 37x24cm or 15×10 Inch Rimmed Baking Tray: Lined with parchment paper across the base.
  • Electric Mixer: Whips the egg whites to medium-stiff peaks and separately beats the egg yolks with the powdered sweetener to a pale, creamy consistency.
  • Silicone Spatula: The only tool worth using for folding the egg whites into the almond flour batter.
  • Mixing Bowl: Holds the almond flour batter as you build it and the whipped cream as you make it.
  • Clear Serving Glasses: Show the layers from the outside so the visual presentation reflects the effort that went into building them.

Ingredients:

For the Sponge Cake:

  • Egg Yolks: This base carries the pumpkin paste and the almond flour.
  • Egg Whites: Five room-temperature whites for maximum volume.
  • Cream of Tartar: Stabilizes the egg-white foam and helps it hold its structure through folding.
  • Fine Almond Flour: Superfine blanched almond flour.
  • Powdered Sweetener: A quarter cup that dissolves evenly into the yolk base.
  • Pure Pumpkin Paste: Adds moisture, flavor, and the warm color throughout the sponge.
  • Psyllium Husk Powder: Binds the almond flour batter and gives the sponge enough structure.
  • Pumpkin Spice Blend: Make your own homemade blend.
  • Water: Loosen the thick batter slightly before adding the egg whites.

For the Whipped Cream Topping:

  • Cold Heavy Whipping Cream: Whipped to a thick, stable consistency that holds its shape through the full 30-minute chill without collapsing.
  • Powdered Sweetener: Sweeten the cream evenly without any grittiness.

To Finish:

  • Ground Cinnamon: Dusted between each layer and over the top of each finished glass.

FULL INSTRUCTIONS WITH STEPS FOR EASY GLUTEN-FREE DESSERT TRIFLE WITH PUMPKIN

First Step: Preheat the Oven and Build Both Mixtures

Heat the oven to 350°Fahrenheit (180°Celsius), line a 37×24 cm or 15×10 inch rimmed baking tray with parchment paper, and set aside. Place the egg whites and cream of tartar in a stand mixer bowl or large clean bowl and whip until medium-stiff peaks form, stopping before the whites look dry or grainy, as overbeaten whites will not fold in properly. In a separate large mixing bowl, beat the egg yolks and powdered sweetener with a hand mixer for 2 to 3 minutes until the mixture is pale, thick, and creamy.

Second Step: Build the Batter and Bake

Add the pumpkin paste, pumpkin spice blend, psyllium husk powder, almond flour, and water to the yolk mixture, then mix until the batter loosens slightly. Beat in a quarter of the egg whites to loosen the batter, then fold in the rest in three additions with a silicone spatula using slow bottom-to-top strokes to preserve the air. Spread the batter evenly across the lined tray, tap it twice on the counter to release air pockets, and bake for 15 minutes until firm to the touch.

Third Step: Flip the Sponge and Make the Whipped Cream

Lift the sponge from the tray using the parchment, lay a fresh sheet on top, flip it over, and peel the original parchment away from the surface. Set the sponge aside to cool completely before cutting. Pour the cold heavy cream into a large bowl, whip to soft peaks, add the powdered sweetener, and continue whipping until thick and stable.

Fourth Step: Assemble and Chill

Cut the cooled sponge into pieces sized to fit your glasses or trifle dish. Layer sponge at the bottom of each glass, top with whipped cream, dust with cinnamon, and repeat until each glass is full. Refrigerate for 30 minutes before serving so the layers settle and the cinnamon softens into the cream.

Zuzana’s Kitchen Notes:

Whip until the cream holds its shape firmly when you tilt the bowl without sliding. For a chocolate element to serve alongside each glass of this gluten-free trifle when it comes out of the fridge, my dark chocolate almond clusters are the best pairing on the same dessert table.

  • Pumpkin Spice Note: To mix your own blend at home, stir together 4 tablespoons cinnamon, 1 tablespoon ginger powder, 1 tablespoon cardamom powder, 2 teaspoons ground cloves, 2 teaspoons nutmeg, and 1 tablespoon allspice. This recipe uses just ½ teaspoon, so store the rest in a small airtight jar for future use.
  • The sponge needs to cool completely before you cut it into shapes for the glasses. A warm sponge tears rather than cutting cleanly, and the whipped cream melts on contact with a warm base rather than staying thick and stable through the full chill time.
  • The size of the glasses determines the number of portions and the look of the layers inside each one. Smaller glasses with more repeated layers look more impressive from the outside, larger glasses give deeper scoops of each component, and either approach works with the same quantities.

FREQUENTLY ASKED QUESTIONS

What to Serve With Gluten-Free Trifle?

Chinese five spice chicken makes a satisfying main course that contrasts naturally with the sweet pumpkin and cinnamon cream once the meal moves to dessert. The feta cheese egg appetizers make a light savory starter for the same occasion and set the table well for the pumpkin trifle as a follow-on.

How Do I Store Gluten Free Dessert Pumpkin Trifle?

Store assembled trifles covered with plastic wrap in the fridge for up to 2 days. The sponge softens gently as it sits against the whipped cream, which some find even better after the first day. Keep the glasses sealed so the whipped cream doesn’t absorb other fridge odors during storage.

Can I Freeze This Pumpkin Dessert Recipe?

Freeze the sponge only before assembling. Cool it completely, wrap tightly in plastic wrap and foil, and freeze for up to one month. The whipped cream doesn’t freeze well and separates when thawed. Thaw the sponge overnight in the fridge and assemble with fresh whipped cream when ready to serve.
