I wanted an apple crumble cheesecake recipe built from real, recognizable ingredients. The chayote in the topping was the part I was least sure about, and it worked most convincingly once I added the apple flavoring and cinnamon. One bite and no one at the table questioned what the topping was made from.

Chayote Works as a Mock Apple Topping

Chayote is mild, slightly sweet, and firm enough to hold its shape through 10 minutes of stovetop cooking without turning to mush, which is exactly what a crumble topping needs to behave correctly over a cream cheese filling. The xanthan gum thickens the liquid in the pan into a light syrup as the chayote softens, and the apple flavoring and ground cinnamon turn it into something genuinely close to a cooked apple filling, without the excess liquid real apples often release onto a cheesecake surface.

Room Temperature Cream Cheese and Eggs

The cream cheese and eggs both need to be at room temperature before you touch the mixing bowl. Cold cream cheese does not beat smooth no matter how long the hand mixer runs, and the small white lumps that remain carry through every slice of the finished cheesecake as uneven patches.   • Ground Cinnamon: Adds apple-crumble warmth alongside the apple flavoring.

FULL INSTRUCTIONS WITH STEPS FOR EASY APPLE CRUMB CHEESECAKE RECIPE WITH CHAYOTE

First Step: Preheat and Prep the Pan

Preheat the oven to 300°Fahrenheit (150°Celsius), pour about 1 inch of water into a deep roasting tray, and slide it onto the bottom rack. Under cold running water, peel the chayotes, cut out the core, slice the flesh into thin, even pieces, then combine all chayote topping ingredients in a frying pan and cook over medium heat for 10 minutes, until the slices are tender and the liquid has thickened to a light syrup. Remove from the heat to cool completely, then line an 18 cm (7-inch) springform pan with parchment paper on the base and sides, and wrap the outside in two layers of heavy-duty foil.

Second Step: Make the Crust

Mix all the crust ingredients together in a bowl until the coconut oil is fully absorbed and the mixture holds together when pressed. Tip it into the lined springform pan and press firmly and evenly across the entire base using clean fingers or the back of a spoon. Set aside while you prepare the cheesecake filling.

Third Step: Make the Filling and Assemble

Beat the softened cream cheese in a large mixing bowl with a hand mixer until completely smooth and lump-free, then add the powdered sweetener and ground cinnamon and beat again until silky. Gradually add the heavy whipping cream in small amounts, mixing well between each addition; then add the eggs one at a time, beating well after each one until the batter is completely uniform. Pour the cheesecake filling over the crust and smooth the surface evenly, then spoon the completely cooled chayote topping across the surface.

Fourth Step: Bake, Cool, and Chill Overnight

Place the springform pan on the middle rack directly above the water-filled tray and bake for 60 minutes, until the edges are set and the center retains a gentle wobble when the pan is carefully nudged. Remove from the oven and cool on the counter for 2 to 3 hours, until no longer warm to the touch; then cover loosely and refrigerate overnight to set completely. Slice and serve straight from the fridge the following day once fully chilled and firm.

Cooling it fully at room temperature, or briefly in the fridge while you prepare the crust and filling, keeps all three layers distinct and the filling smooth from the almond flour crust to the surface.   • Wrap the outside of the springform pan in two layers of heavy-duty foil before baking. Water from the bath can seep through some springform bases and wet the almond flour crust from underneath, and the foil barrier keeps the crust dry without affecting the bake.
  • Taste the chayote topping before adding the xanthan gum, then adjust the apple flavoring from there. Brands vary in concentration, and a few drops too many can tip the flavor from realistic to artificial, so add it incrementally and taste as you go.
  • The cheesecake is done when the outer 2 inches are completely set, and only the very center has a slight, controlled wobble when you gently nudge the pan. If the entire surface still moves as one liquid sheet, it needs more time, and if the center looks puffed and completely solid, it has gone past the right point.
