Toasted coconut, which I am using in a recipe, is a delicious and simple way to add texture, flavor, and crunch to any dish. For our cauliflower coconut rice recipe, you can garnish with toasted coconut flakes or shredded coconut with cilantro and lime zest.

To toast the coconut flakes or shredded coconut made from desiccated coconut, preheat your oven to 350 Degrees Fahrenheit or 175 Degrees Celsius. Spread the coconut on an even-layer baking sheet and bake for 5-7 minutes until golden brown. Allow cooling before using as a garnish.

FULL INSTRUCTIONS WITH STEPS FOR THE COCONUT CAULIFLOWER RICE RECIPE

First Step: Make Rice

If you are going to make your rice, follow my super easy, quick tip to learn how to rice cauliflower in under a minute.

Fully clean a whole large head of cauliflower and cut out all the leaves and the middle stem. Chop the raw cauliflower head into smaller pieces. Place fresh cauliflower florets into your blender and add water to submerge fully. Switch your blender or food processor and pulse a few times. Watch how the cauliflower gets transformed into tiny pieces like rice in seconds. Pour the whole mixture through the sieve and let the rice dry.

Second Step: Prepare Ingredients

Prepare all of the ingredients for making our delicious dish.

Regarding the coconut shreds, you can also use toasted, which makes your meal even crunchier.

If you use frozen cauliflower rice, let it thaw for a few hours.

You can also create and use coconut milk made from shreds at home.

Third Step: Roast Rice

Start by heating two tablespoons of coconut oil in a skillet over the stove.

Into the skillet, add crushed garlic, and roast slightly. Add the cauliflower rice and saute for 2 to 3 minutes on medium heat.

Fourth Step: Add Spices and Milk

Season with salt and pepper. Stir in the coconut milk and cook on medium-high heat. As an option, you can also add a bit of lime juice and lime zest.

Fifth Step: Cook and Add Shreds

Once the milk has evaporated, switch the heat off and add the coconut shreds raw or toasted.

Mix thoroughly and serve.

Finally, to enhance the flavor even further, top your coconut cauliflower rice with some freshly chopped cilantro, garlic powder and lime wedges.

  • Cauliflower rice – I have used 2 cups of cauliflower rice for the recipe. You can freeze extra leftover coconut rice for the future. Just add the cauliflower rice into ziplock bags.
  • Coconut milk – it is best to use full-fat coconut milk
  • Coconut cream – the cream can be used instead of milk for a thicker and more intense coconut flavor. If you use canned coconut milk or cream, shake the can before opening it.

To store this deliciousness, put the cooked cauliflower coconut rice in an airtight container or wrap it tightly in plastic wrap and store it in the refrigerator for up to 4 days.

When ready to reheat and enjoy, transfer it to a microwave-safe bowl and cover it with a damp paper towel.

Heat for 2-3 minutes until heated through.

You can also reheat the cauliflower coconut rice on the stovetop over low heat, occasionally stirring so that the rice is evenly heated.

Can You Freeze Riced Cauliflower?

Yes, you can freeze rice cauliflower. To freeze it, spread it on a baking sheet and place it in the freezer until it is frozen. Then transfer the cauliflower to an airtight container or bag and store it in the freezer for up to 3 months.

Can You Freeze Keto Coconut Lime Cauliflower Rice?

You can quickly freeze this dish. 
To freeze, allow the cooked cauliflower rice to cool completely and then place it in a freezer-safe container or bag. Freeze for up to 3 months. When ready to use, thaw overnight in the refrigerator before reheating.
