As a home cook and food blogger, I love making recipes from scratch, especially when I can keep them clean and gluten-free, like my frozen chicken nuggets in the air fryer. Kitchen Gadgets:

  • Small Containers & Mason Jars: Place the ingredients in containers and the liquid ones in mini mason jars to keep everything organized.

Ingredients:

  • Chicken: Boneless, skinless chicken breasts or thighs work best for convenience but you can use a whole chicken and remove the skin and bones before chopping.
  • Onion: Any type of onion will do, but yellow onions are a good choice.
  • Garlic: Minced fresh garlic cloves are best, but garlic powder can also be used in a pinch.
  • Butter: Use butter sticks to saute the chicken and veggies.

FULL INSTRUCTIONS WITH STEPS FOR MAKING CHICKEN AND DUMPLINGS

First Step: Prepare Ingredients

Ready all the ingredients.

Prepare by cutting or shredding chicken into small pieces. The same goes for zucchini, leeks, and carrots. After they are all sliced into pieces, set aside with the rest of the ingredients.

Ingredients for gluten-free chicken and dumplings: chopped chicken breast, carrots, zucchini, leeks, onions, garlic, broth, heavy cream, butter, dumplings, and xanthan gum on a table.

Second Step: Onion, Garlic, and Chicken

Heat the butter sticks in the pot until hot and melted. Add onion and garlic and cook them until they caramelize. After a few minutes, add the chicken slices and saute until they are cooked and turn golden brown.

When the chicken is cooked, start adding the vegetables and broth. Stir for a few seconds and cover the pot with a lid to let it simmer.

A four-step cooking process: sautéing onions, adding chicken, pouring broth over chopped vegetables, and covering the pot with a lid.

Third Step: Xanthan Gum and Heavy Cream

After simmering, mix the Xanthan gum with the chicken stock and add the heavy cream. Stir a bit, then bring the creamy broth back to a simmer.

TRICKS AND TIPS:

  • For the chicken, you can use chicken thighs, cooked chicken, or rotisserie chicken.
  • To make cooking easier and quicker, prepare all the vegetables ahead, like chopping all the vegetables before cooking.
  • When simmering the soup with the dumplings, keep it at a gentle simmer to prevent them from breaking apart.
  • If the broth is too thin, add a bit more xanthan gum, but if it’s too thick, thin it out with a little extra broth or water.
