First Step: Set Everything Out

Take out the okra, almond flour, all spices, and cooking oil and set everything within reach before the heat goes on. Rinse the fresh ladies fingers thoroughly, then press each piece dry between layers of paper towels until no visible surface moisture remains. Trim the ends and slice into evenly sized rounds so every piece fries at the same rate.

Second Step: Season and Coat

Place the sliced ladies finger into a bowl and add the salt, black pepper, cayenne, and smoked paprika, then toss until every piece is evenly coated in the spice blend. Heat enough oil in a deep pan over medium-high heat until a small pinch of almond flour dropped in sizzles immediately and rises to the surface. Add the coated ladies finger carefully in small batches, making sure not to crowd the pan. Fry for 4 to 5 minutes, stirring occasionally, until the coating is crisp and golden on all sides.

Fourth Step: Drain and Serve

Lift the fried ladies finger out with a slotted spoon and transfer to a plate lined with paper towels to drain the excess oil. Sprinkle with a little extra salt while still warm. Serve immediately for the best texture.

Zuzana’s Kitchen Notes:

I tested this directly by skipping the drying step on one batch and ended up with pale, soggy bhindi with most of the coating sitting at the bottom of the pan rather than on the vegetable. Pressing each piece firmly between two layers of paper towel until no moisture remains is the right step. For a well-spiced protein to serve alongside this as a complete meal, my curry chicken makes a natural pairing.

  • Use enough oil to fill the pan to at least one inch deep. Shallow oil means the sides of each okra piece stay pale while only the base crisps, and you end up having to flip each piece individually rather than letting the hot oil do the work all the way around.
  • To check oil temperature without a thermometer, drop a small pinch of the almond flour coating into the pan. If it sizzles immediately and rises to the surface, the oil is ready. If it sits and slowly darkens, wait another minute before adding the ladies finger.
  • For a bhindi masala variation, add a quarter teaspoon of garam masala and a pinch of turmeric powder to the spice mix before coating. The turmeric gives the coating a golden color, and the garam masala adds a deeper, more complex warmth to the finished bhindi fry.
  • Do not cover the plate after frying. Steam trapped under a lid or foil softens the almond flour coating within minutes, and the crunch that makes this recipe worth making disappears before it reaches the table.
