I had a jar of pickles and decided to run them through the air fryer just to switch things up. First Step: Gather All Ingredients

Grab everything you need: pickles, coconut flour, eggs, and a wholesome breading mix. Drain the pickles well and cut them into rounds or spears for easy coating. Preheat your air fryer to 400°Fahrenheit (200°Celsius) so it’s hot and ready.

Second Step: Light Coconut Flour Coating

Gently coat each pickle slice in coconut flour for a light, grain-free base. This helps the next layers stick better and adds extra crispness. Be sure every piece is lightly dusted before moving on.

Third Step: Dip in Egg Wash

Zuzana’s Kitchen Notes:

The first batch I made had a coating that half-slid off during air frying, and I could not figure out why until I realized I had not dried the pickle slices thoroughly enough before the coconut flour went on. Pickle brine is acidic and wet, and even a small amount of surface moisture left on each slice prevents the coconut flour from adhering properly, which means the egg wash has nothing solid to grip and the whole coating loosens in the heat. For another snack where drying before coating makes exactly the same difference to the finished crunch, my pan-fried dill pickle chips cover the same principle with a completely different cooking method.

  • Use a light coating of oil spray on the chips to help the breadcrumbs crisp up without making them soggy.
